This is Lucanica in is its purest form.Fresh chopped pork and sea salt gently mixed and then filled into narrow sheeps casings and rolled into coils.
Traditionally the coils are sold and cooked in one piece.Once cooked the sausage it is then cut into portion size.Alternatively individual coils can be formed before cooking and if required secured with a skewer.This is a particularly good method on a barbecue.
Luganege are naturally low in fat and with a very high meat content,over 97%.They do not contain rusk or water.
